Leek and potato soup can be as simple or as complicated as you want. But there is no doubt that even the most basic of the recipes ends up with one of the tastiest soups around. The variants include serving it cool (Vichyssoise), cock-a-leekie, smooth or chunky, other ingredients added.

Not only is leek and potato soup extremely tasty, it has other great qualities as well. The basic recipe is almost foolproof, you will always end up with a very edible soup however culinary challenged you are. Not many recipes can claim that.

Value for money has to come high on the list as well. A main meal bowl of leek and potato soup with a couple of chunks of bread costs about 70p. And for that you get a thoroughly nutritious and healthy meal. It's also quick to prepare and even quicker from frozen.

Don't even consider buying the canned version from the supermarkets. Taste wise they are not a patch on a home made soup. Do it yourself and you know there are no added preservatives, colourings etc. You also now exactly where the ingredients have come from. Long live homemade leek and potato soup!

We have recently started to include not only soups but other recipes where the primary ingredients are leeks and potatoes. These go to show even more how versatile these two vegetables really are.

RECIPE FOR QUICK AND SIMPLE LEEK AND POTATO SOUP

SERVINGS Four main meal, six starters
PREPARATION TIME 15 minutes
COOKING TIME 35 minutes
FREEZES? Yes, very well

INGREDIENTS

Prepared ingredients for the soup
Four medium leeks trimmed (approx. 500g / 1lb 2oz)
Two medium potatoes (approx. 500g / 1lb 2oz)
1 medium onion
1¼ litre / 2.2 pints of hot vegetable stock, fresh or water and two stock cubes
2 tablespoons of butter
¼ teaspoon salt
¼ teaspoon pepper

PREPARATION

Wash the leeks and chop off the top green parts.

Slice the leeks finely.

Put the copped leeks in a colander and rinse them to remove any soil particles

Peel, top and tail and finely chop the onion.

Peel and chop the potatoes into roughly 2cm / ¾ in cubes.

If using stock cubes, dissolve them into hot water.

COOKING
1. Melt the butter in a large pan on a low heat.
2. Add the leeks and onions to the butter in the pan. Cook on the low heat for 10 minutes. Turn the ingredients often to coat them all in the melted butter. You may need to do this in two batches if your pan is not a large one.
3. Add the potatoes, hot stock, salt and pepper to the pan and bring to the boil. Simmer on a low / medium heat for a further 20 minutes. Stir a couple of times to stop the soup sticking to the base of the pan.
4. Blend the soup in a blender for a couple of minutes until smooth. Pour back into the pan and reheat for a couple of minutes.

Alternatively, blend only half of the cooked soup if you want to have some texture in the leek and potato soup. Then pour the blended half back into the pan and briefly reheat.

SERVE WITH?

Chunky white bread or a baguette. If you have any herbs available then chop them and sprinkle over the top.
